Easy Blondies

Classic rich and fudgy blondies are the ultimate sweet treat for any white chocolate fan. This easy recipe just melts everything together so there’s no need for whisking or folding ingredients together, and they just need a handful of ingredients. Bake for 40 mins for that classic fudgy centre, or 45 mins for more of a cakey texture.

Easy Blondies Recipe

INGREDIENTS

200g Finest Plain White flour

175g unsalted butter, plus more for greasing

200g soft light brown sugar

100g caster sugar

200g white chocolate chunks

3 medium eggs

2 tsp vanilla extract

Pinch of salt

YOU WILL ALSO NEED

25cm x 20cm baking tin

METHOD

  1. Heat the oven to 180C/fan 160C/gas 4. Line a baking tin with parchment paper.
  2. Melt the butter, both sugars and half the chocolate with a pinch of salt in a pan over a low heat, until melted and smooth. Remove from the heat and leave to cool for about 5 mins.
  3. Beat the eggs into the white chocolate mixture with a wooden spoon or spatula, then stir in the vanilla extract, followed by the flour. Fold in the remaining white chocolate chunks.
  4. Scrape into the tin, and smooth out to the sides. Bake for 40-45 mins until the top has a papery crust, the edges are golden and coming away from the tin, but there’s still a slight wobble in the middle of the blondies. Leave to cool in the tin before cutting into squares.

RECIPE TIP Add 50g chopped nuts or dried fruit of your choice to the batter, or top with 50g crushed biscuits or pretzels before baking to flavour the blondies.
