Golden Wholegrain Traybake
Easy to make - cut into squares for a teatime treat!
Line the tray with greaseproof paper.
Measure all ingredients except the mixed fruit and Demerara sugar into a bowl & beat well.
Add the mixed fruit and mix in gently.
Spread evenly in the tray and bake at 180°C/160°C fan for about 30 minutes.
The cake should shrink away from the edges of the tin and spring back when pressed in the centre.
Take out of oven and if desired, sprinkle with Demerara sugar.
Leave to cool in the tin. Once cooled, the traybake can be cut into individual pieces.
Baker's Tip: The 350grams of mixed fruit can be replaced with 350 grams of any filling you fancy - like cherries, coconut or chocolate chips.

250g Soft Brown Sugar
350g Plain Golden Wholegrain flour
15g Baking Powder
350g Mixed Dry Fruit
A Little Demerara Sugar (optional topping)
