Kelvin Ellam, Technical Baker, describes how wheat is tested at Chelmer Mills.
What does testing the wheat involve?
In the laboratory at Chelmer Mills we test every load of wheat that comes in. This includes a visual assessment, as well as testing the wheat protein level, moisture content and hardness using a NIR machine. We assess the screenings (any undersized grains or impurities like chaff) and measure the bushel weight of the wheat. We also do a gluten wash and Hagberg test.
Why do you need to test the wheat?
We test the wheat to establish its characteristics and ensure the quality meets our milling specifications. August and September are very busy for the laboratory team as being harvest time, all the new wheat is coming in from farmers at the moment.
